Light Chard and Kale Pesto

Because you really can make pesto with ANYTHING, and I grow a lot of garlic, chard, basil, kale, and celery.


1 10 oz Jar Olives with pimentos, brine reserved
10 large cloves garlic
5 cups basil, packed
3 cups chard leaf, packed
3 cups kale leaf, packed
10 medium chard stalks
1/4 cup olive brine
4 oz pine nuts
approx 2 cups chopped celery stalk
1 tbsp red wine vinegar
1/4 tsp red pepper flakes
1/8 tsp ground red pepper
25 grinds black pepper
3 tsp lime juice
1/4 tsp cumin
3 grinds sea salt

Throw everything except olive brine in the food processor, puree. Add olive brine slowly, to achieve desired consistency.

Makes about 5 cups
