3 to 4 medium garlic scapes, chopped
Juice from 1/2 to 1 lemon or lime (I like limes better, so I usually go with lime).
1/2 teaspoon sea salt, more to taste
Ground black pepper to taste ( I use with vast enthusiasm)
1 can (15 ounces) great northern beans, drained
1/4 cup olive oil.
2 to 3 tablespoons water
Optional: a hint of green Tabasco sauce.
In a food processor, process garlic scapes with lemon juice, salt and pepper until finely chopped. Add beans and process to a rough purée.
Slowly add olive oil and process until smooth.
Add water until mixture is the consistency of a chip-dip. Add more salt, pepper and/or lemon juice, if desired.
