Granny’s Ambrosia Salad (aka ‘Unicorn Puke’)

My grandmother used to make this wonderful dessert for family get-togethers and picnics.  Fortunately, my cousin Sarah saved the recipe.

Ingredients
1-8oz package of cream cheese
2-8oz containers of cool whip
2-20oz cans chunk pineapple
1-15oz can mandarin oranges
2-10oz jars of maraschino cherries
1 1/2 bags (21oz) coconut
1- 2 10oz bags of small flavored marshmallows

Instructions
Mix softened cream cheese and whipped cream together with your hands, making sure it is mixed through with minimal cheese lumps.
Drain pineapple save the juice for later
Add pineapple to whipped cream mixture
Drain oranges and add to mixture.
Drain cherries save juice for later, add cherries to mixture
Mix with hands
Slowly add in coconut until it starts getting thick. If it feels dry add a little pineapple juice. Mix well
Then slowly mix in marshmallows
If dry, mix in a little cherry juice.

If you make it a day in advance, keep the pineapple juice so you can mix it in, to keep salad moist.
